Salmon with Mango Mint Salsa and Lemon Scented Cauli-Rice
Ingredients
🥭 8 oz salmon filet
🥭 1/2 large mango, diced
🥭 1/8 large red onion, chopped
🥭 2T fresh mint, chopped
🥭 Juice of a lemon
🥭 3-4 lemon slices
🥭 Juice of half a lime (optional)
🥭 2-3 cups frozen cauli-rice
🥭 1T garlic, crushed or minced
🥭 1T yellow (or red) onion, minced
🥭 2T olive oil
🥭 Salt, pepper, and garlic powder (to taste)
Directions
Sprinkle salmon with salt, pepper and garlic powder. Layer lemon slices on salmon and let sit for 20-30 min.
In a small bowl; mix mango, red onion, mint, salt, pepper and lime juice (or half of lemon juice). Refrigerate for at least 30 min.
Heat a non-stick skillet to medium heat and spray with olive oil spray. Squeeze lemon over salmon and cook for about 6-8 min on each side, until no longer red all the way through. Set aside.
Heat olive oil in same skillet. Cook minced yellow onion and crushed garlic until fragrant and then add cauli-rice to the pan. Stir to combine. Cook for about 5 min, then add salt to taste. Cook 5-10 more minutes, stirring regularly until cauli-rice is soft and looks toasted. Remove from heat and toss with remaining lemon juice.
Serve salmon over cauli-rice and top with mango salsa! Makes 1 serving!
