Blueberry Protein Muffins

𝕀𝕟𝕘𝕣𝕖𝕕𝕚𝕖𝕟𝕥𝕤
🧁 1 cup Old Fashioned Oats, ground into flour
🧁 1/2 cup Fine Almond Flour
🧁 2 scoops Low Carb Vanilla Protein Powder (I used Ultimate Nutrition CarneBolic beef protein)
🧁 1/4 cup 1:1 Sugar Substitute (I used Swerve Brown Sugar Substitute)
🧁 2 T Psyllium Husk
🧁 1 t Baking Powder
🧁 1/2 cup Egg Whites
🧁 3/4 cup Almond Milk
🧁 1 cup Blueberries

𝔻𝕚𝕣𝕖𝕔𝕥𝕚𝕠𝕟𝕤
Preheat oven to 350°F. Mix dry ingredients in a large bowl. Add wet ingredients and mix thoroughly. Fold in blueberries. Lightly spray 6 cups of a muffin tin with olive oil spray. Divide the batter evenly between the 6 cups. Bake for 25 min or until a toothpick in the center comes out clean. Let cool about 10-15 min. Loosen muffins from the pan with a plastic knife. Enjoy!
