30 Minute Taco-Quinoa Bowls

This one tastes good, is quick to make and great for meal prepping in batches. This recipe makes 4 servings! You know I don’t measure seasonings, so these are just estimates! Use as much or as little as you like!

Ingredients
2 1/4 lbs 85/15 or 90/10 ground beef
2T extra virgin olive oil
1/2 bag of frozen sliced onions and peppers
2T crushed garlic
4T tomato paste
1-2T chili powder
1T dried cilantro
1/2 T cumin
1/2 T smoked paprika
1/4-1/2 cup jarred salsa (optional)
Salt & pepper, to your preference
Juice of 1/2 lemon
1 cup quinoa, dry
1 bag frozen, chopped kale
1 bag frozen cauliflower rice

Directions

Cook quinoa to package directions and let cool. in a large skillet or wok, heat oil, add onions, peppers and garlic. Cook for a few minutes until soft. Add ground beef and seasonings. Cook until brown. Add tomato paste (and salsa, if using). Stir everything together and allow to simmer for a few minutes until it’s not runny. Remove from heat, mix in lemon juice and let cool. Divide the frozen cauliflower rice, kale and quinoa evenly between 4 containers. Season them if you like. The frozen vegetables will defrost in the fridge and cook when you microwave the meals. Divide the ground “taco” meat evenly between the containers. 4 meals prepped in 30 min! Label and date them, store in the fridge and microwave for 3 min when it’s time to eat!
